The premium brand Lowell Herb Co. has finally succeeded in getting a license for its rooftop cannabis cafe. They have partnered with chef Andrea Drummer, a famous chef from Le Cordon Bleu. Drummer is famous for holding events related to culinary cannabis since 2012.
The purpose of such events was to raise awareness about the intake of cannabis. It was during such an event that Lowell Herb Co. conceived the idea of cannabis cafe.
The place would be a rustic, plant-filled, 220 seat space. It would provide an excellent ambiance to cannabis consumer to smoke publicly in complement with the world’s best classy food. She intends to pair her food not with the regular items but with the best quality cannabis products.
Moreover, Drummer’s innovative ideas include a consumption lounge, bright and airy oasis. The customers would enjoy tableside “flower” service – cannabis bud. She aspires to serve freshly infused food cooked in rich ingredients such as cannabis butter and oils. CBD will be used proportionately to the required dose of customers. Budtenders would help customers in their selection of the right kind of marijuana.
What were the major challenges?
The basic challenge was the lapse in the state laws related to legalized licensing of cannabis. Despite the fact that consumption lounges are under license in the city, licensing of cannabis café is an exception. Lowell has resolved the issue in a simple way. He splits the two businesses – a lounge to smoke cannabis and a restaurant.
Another major issue is about serving freshly infused food. It is not possible to serve cannabis product without testing. So, they have to wait for proper legislation in this regard. However, until then, Drummer has decided to prepare non-infused food in combination with a dessert “flight” or “sauces” or “dressings”. Moreover, the sauces would contain THC as a cooperative element.
Lowell company promised to install an air filtration system in its smoking lounge. According to state laws, no beer or alcohol would be served with CBD products.
Being the author of CANNABIS CUISINE, Drummer wants perfect pairing for food items. She recommends that Kush would go better with stew or beef or meat. A light lemon profile goes well with fish. “Blue Dreams” perfectly complements ice creams and bread puddings.
Scope of the cannabis cafe industry
According to the National Restaurants Association Survey, plant-based ingredient including cannabis are the latest trends. West Hollywood is a trendsetter for the rest of the blue states. In the future, there is a strong probability that the cannabis cafe would be quite common. As they are ideal for locals, tourists, and renters as well.
In California, renters are not allowed to smoke in their apartments. If they smoke publicly, they can get arrested.
Drummer together with her partner wants to set standards for the people who will follow the same path. Furthermore, they feel a great sense of responsibility. Wellness and educating the consumers about proper dosing are their major concerns. It is their future plan to introduce liquid diet for cancer patients.
